Whath IS the quantité of oil engin to mopar 440 ci SP.?

When you drain the sump and change the filter you should find it takes 7 quarts to reach the full mark on the stick. I would put 6 quarts in and start it up to fill the filter then check it.

I would go with what the manual says - being aware that an Imperial (UK) pint is not the same quantity as a US pint.

To complicate further, if your sump pan has the deeper version, the quantity will be greater.
I would follow the manual.
If it says 8.5 pints:
in UK pints it is 4.8 litres.
in USA pints, it's 4 litres.
To be safe, maybe start at 4 litres, wait a while, then check the dipstick and add oil accordingly.
I usually buy 2 x 5 litres cans of oil as it is more than one x 5L.
I would follow the manual.

Remember these engine run flat tappets that need Zinc to survive. Most of the modern oil have removed this as it hurts catalytic converters. Need to use a zinc (ZDDP additive) or run an oil with it still in like Penn Grade (Green Oil). I also remember reading Castrol has one with zinc in it.

That is incorrect and a myth that is perpetuated by some who want to sell their own grades of oil. No oils have it removed. Even the low viscosity ILSAC grade oils (0W-20, 5W-20, 0W-30, 5W-30 and 10W-30) have between 600 and 800ppm.
