How do you remove the ac ball vents in a Interceptor mk3?

You have to take the dash out and then your be able to remove then, if you try to take them out without removing the dash, your brake them

As Colin says, the only real way to do this is by removing the dash.
From memory it’s only x4 bolts, but you need to set aside a good few hours for this.
